Shockingly Satisfying Popsicle Surprise

It's the end of May.  You've just spent Memorial day picnicking, parade watching, attending weddings, grilling, and spending time with family and friends.  It's time to pack everything up and get back to the daily grind.  There's only one problem...it's still sunny and you aren't ready to be done lounging around outside.  You want more freeziepops, burgers, brats, and salads.  But you also know that the time wherein you are expected to wear clothing which showcases your pasty whiteness is just around the corner and you do so want to try your best to look decent.  I have an utterly shocking revelation for you!  A one-of-a-kind dessert so unthinkable you'll most likely doubt it's very existence.  It's sweet, cold, and yet almost completely healthy.  I have one now awaiting me in the freezer with an enticing combination of food I love and food I never thought I would like.

Ladies and gentlemen of the jury, may I present to you the Avocado Popsicle!
I know, I know, you're all wondering if the lack of sun has gone to my head and I'm putting just any old thing in a Popsicle mold to make it feel like summer.  But I promise, it's shockingly tasty!  The avocado gives it the consistency of a creamsicle while the sugar gives it just the right amount of sweetness.  Go ahead try it!  Do what I did and cut the recipe in half while reading every instruction with utter dismay that a tasty treat will be the end result.  Then, when you're about ready to give up and have convinced The Husband to try it first in case it's completely awful be amazed at the deliciousness and immediately add more avocados to your grocery list.
You'll start with sugar and water to make a simple syrup
You'll think that this isn't such a bad start, at least it makes sense as a dessert base
And then you go and cut the first avocado you have ever laid hands on and wish you'd watched The Husband much more closely as you can't remember what he does to get the seed (nut?) out 
You add the avocado, simple syrup, and some lemon or lime juice into a blender with doubts in full swing
Blend until it's creamy enough to pour ever so easily into your favorite Popsicle molds
Wait a couple of days until you can brace yourself enough to give it a try upon which you discover your new favorite summer dessert and you can legitimately call it healthy!

I found the recipe here but will reprint it below with one alteration and a thought or two to help you out.

Recipe:
1 C water
1/2 C sugar
2 small ripe avocados
pinch of salt
2 T lime juice
  • Bring the water and sugar to a boil in a small pot over medium high heat until the sugar is dissolved
  • Allow the simple syrup to cool
  • Cut the avocados in half and remove the nut (seed?) and scrape the flesh into a blender
  • Add the cooled syrup, salt, and lime juice (or lemon juice) into the blender
  • Blend until smooth
  • Pour into mold and allow to sit for at least 5 hours in the freezer before consuming.
  • Makes enough for 5 Popsicle

    are also close. What I like about mine is that there's a little catch at the bottom and a straw so if you take forever to eat it it won't drip all over you and you just end up drinking it instead. I think we could make something happen for you :)
